I did too much grocery shopping this weekend, considering I move out of my apartment in August, so I am set on making food as often as possible so my fridge is empty when I move out. On the way back from work, I had a great idea for what to have tonight! Remember this post?
Ground pork is what makes mapo tofu great. I like extra spicy (I am from Sichuan, where mapo tofu was invented, afterall) so I sliced up a handful of dried cayenne peppers and added it on top of the recipe. I even minced the ground pork with black pepper. I love the dark orange color of the sauce.
